Rosario Castle: Profile, Origin and Characteristics
What is the Castillo Rosario variety?
What is the Castillo Rosario variety?
The Castillo Rosario variety is a hybrid developed from Arabica coffee lines selected for their resistance and stable yield. In Ecuador, it has adapted well to medium and high altitudes, offering a balanced sensory profile when cultivated and processed with precision.
Unlike other more exotic varieties, Castillo Rosario stands out for its consistency in the cup, good structure, and potential to express chocolatey and soft fruity notes when handled correctly from the farm.
At ISVAR Coffee Factory we cultivate this variety on the La Cabaña farm, in the Quijos Valley, Napo, under conditions of altitude, humid climate and manual handling that allow us to highlight its Ecuadorian character.
