Geisha: Profile, Origin and Characteristics

A variety with a delicate floral profile, elegant aromas, and a clean cup. Ideal for filter brewing when you're looking for complexity and precision.

What is the Geisha variety?

The Geisha variety is one of the most renowned in the world of specialty coffee for its distinctive aromatic profile and elegant cup. Although it became popular in Panama, its genetic origins trace back to Ethiopia.

It is characterized by producing coffees with great aromatic complexity, bright acidity, and a clean structure. It is not a high-yielding variety on the tree, but when cultivated and processed with precision, it offers an exceptional sensory experience.

In Ecuador, the behavior of Geisha grapes depends on the microclimate and altitude. When well-crafted, it expresses fine floral notes, delicate citrus nuances, and a clarity that makes it ideal for filtered methods.

Geisha sensory profile

Predominant aromas

White flowers like jasmine, delicate citrus notes, and subtle nuances reminiscent of fresh fruit. The aromatic profile is clean, elegant, and highly defined.

Acidity

Bright and fine acidity, well integrated. It provides freshness without aggression, elevating the sensory experience with a vibrant yet balanced sensation.

Body

Light to medium body, silky and refined. It prioritizes clarity in the cup over density, allowing aromatic nuances to express themselves with precision.

Cuphead

A clean, persistent, and delicate finish. It leaves a soft floral sensation and an elegant impression that lingers without overwhelming the palate.

At ISVAR, we work with Geisha with a focus on precision and clarity. It is a delicate variety that demands precision from harvesting to roasting to preserve its floral profile and clarity in the cup.

We perform rigorous manual selection and detailed grading to reduce defects and protect its finest nuances. The process is geared towards expressing elegance, not intensity.

In the roasting process, we aim to highlight subtle aromas, bright acidity, and a clean finish. The goal is not volume, but rather definition and sensory transparency.

Who is the Geisha ideal for?

Geisha is not a variety for everyone. Its delicacy and complexity make it an ideal choice for those seeking a more refined sensory experience, where nuances and clarity in the cup take center stage.

Floral lovers

For those who appreciate elegant aromas and notes of white flowers with a light mouthfeel. It's ideal if you prefer delicacy and definition over intensity and a heavy body.

Ideal for filtered methods

It expresses itself best in a V60, Chemex, or manual brewing method where the clarity allows you to appreciate every nuance. In espresso, it may lose some of its aromatic finesse.

Fine cupping experience

Designed for those who enjoy analyzing acidity, finish, and complexity. It's not a coffee of volume, but of sensory transparency and delicate balance.

How to prepare Geisha to better appreciate it?

V60

Grind to medium-fine for a clean and even extraction. Use water between 90 and 93°C to preserve floral aromas and avoid bitterness. Maintain an approximate 1:15 ratio to highlight clarity and bright acidity.

AeroPress

Medium grind, aiming for controlled and balanced extraction. Use water between 85 and 92 °C to maintain definition and avoid over-extraction. It's a versatile method that allows you to highlight sweetness and cleanliness without losing aromatic clarity.
